Healthy Recipe: Chicken and Herb White Pizza

It’s Friday night. You and your spouse just got home from work and it’s been a rough week! The kids are going in a million different directions; one has to cheer at tonight’s football game, one is sleeping over at a friend’s house and one is begging you to have friends sleep over. You only have a short amount of time to get everyone fed and on their way. So what do you choose for dinner? Something from one of the hundred fast food places in your city or pop in a healthy pizza that you’ve pre-made and put in the freezer for times like this?

Glad you chose the healthy pizza option! If your kids are picky eaters, would they say no to pizza? Chances are probably not! Instead of ordering from a pizza place where you have no idea what’s going in to making the pizza, why not have the option of putting your own healthy touch on your pizza!

Check out the recipe below for my favorite Chicken and Herb White Pizza!

Ingredients:

  • 1 Pound of Refrigerated Fresh Pizza Dough (go with the wheat! It’s the best)
  • Cooking Spray – Non/Low Fat
  • 2 Garlic cloves, minced
  • 2 Tablespoons all-purpose flour
  • 1/2 Teaspoon freshly grounded black pepper
  • 3/4 Cup skim, non-fat milk
  • 1/2 Cup (2 ounces) grated fresh pecorino Romano cheese
  • 1 1/2Cups shredded rotisserie chicken breast
  • 1/4 Cup dices red onion
  • 1 Tablespoon chopped fresh oregano
  • 1 Tablespoon chopped fresh chives
  • 1 Tablespoon chopped fresh parsley

Preparation:

  1. Preheat oven to 450*.
  2. Place dough in a bowl coated with cooking spray; let dough stand covered for 15 minutes.
  3. Spray non-fat cooking spray in a medium saucepan over medium heat. Add garlic; cook 30 seconds, stirring constantly. Add flour and pepper; cook one minute, stirring constantly with a whisk. Gradually, add non-fat, skim milk, stirring constantly with a whisk.
  4. Remove from heat; add cheese, stirring until cheese melts.
  5. Roll dough into a 12-inch circle on prepared baking sheet. Spread white sauce over dough, leaving a 1/2-inch border. Top with chicken and onion. Bake at 450* on bottom oven rack for 17 minutes or until crust is golden. Sprinkle with herbs.
